Stuff & Things

I stayed home instead of going to the zombie thingy over at Forbidden Island. I love the whole zombie thing, and zombies + tiki seems awesome, but I’m glad I stayed home today.

Plus, I’m not sure the zombies beat the clan of Scots who came piping through the doors of Forbidden Island while we were there last night, celebrating a friend’s birthday. ;)

After the piper stopped playing, she turned to us and gushed, “You guys did this for ME?! THANK YOU!!” and giggled. Truly the cutest thing all night.

Always starstruck by RealScots™ in kilts and tartans, one of the ladies passing by noticed my husband and I gawking and said they were celebrating Burns Day. And apparently it was one of their friends’ birthday, too, cuz the piper did a rendition of Happy Birthday. I’m so sad our birthday friend had already left by that time - it would’ve been PERFECT!!!!

Then the piper came up to my husband, looked him up and down and remarked, “you’d look good in a kilt.” He beamed back at the piper and said, “I DO actually, I wore one for my wedding!”

WELL. The piper was INSTANTLY as fond of us as we were of him, and sat down and chatted with us. This is the coolest because earlier that same day, we’d spent time with another friend, who gave us the scoop on some of the best places to visit in Scotland (our honeymoon commences May 10!!!).

I told my man on the way home last night that I considered seeing a piper and his kilted friends at the tiki bar a good omen. :)

Anyway so today I stayed home cuz Sundays are my domestic days. I NEED my Sundays. That’s the only time I have time to get real housework done and all my clothes and food prepped for the week.

It’s taken me nearly two years, but I’m *finally* starting to enjoy food prep and cooking. Tonight I made a stir fry dish - from the menu of the Endometriosis Diet e-book I bought. I’ve made this dish once before and it was tasty. It contains coconut milk, red curry, onions, zucchini, potatoes, fish oil, olive oil, and lime juice. You cook it all up and eat it with some basmati rice…it’s yummy.
That’ll be lunch tomorrow and possibly Tuesday.

By tomorrow, the cornish hens will have thawed and I can cook them up for lunches for the rest of the week.

I also have my breakfast prepared for the week; strawberries, kiwi and blackberries in individual serving sized dishes all ready to go in the fridge. I mix that up with goat’s milk yoghurt, flax oil, a tad bit of orange juice or apple juice for sweetening, and add in some gluten free granola. Bananas optional. Voila! Brekkie! I got that recipe from a book called The Oil-Protein Diet, and modified it for my gluten and cow’s milk allergies.

Today was Burns Day *and* the New Moon. Overall a very lovely day. A complete turnaround from yesterday morning! Between yesterday afternoon/evening and today, I am now going into the workweek on a happier note. :)
